First, make sure it’s dry. You can put it in a sieve and put a small heavy plate or two (like a thick saucer) on it to get all the spare water out. Leave it there for awhile and you’ll see the water dribble away.
Next, put a bit of oil in the pan. Heat up the oil a tad, then toss in the cubes of tofu, and you should get a crisp result.
You can also barbecue it this way-different effect, but you’ll get those “grill lines” and a crisp exterior. Nice with a bit of teriyaki sauce….
